In 2023, Versailles celebrates its 400th anniversary. The political history of the château, to which the figure of Louis XIV remains attached, leaves other forms of history in the shade, starting with the history of food. Seventeenth-century France underwent a veritable revolution in this area, with the cuisine served at the tables of the king, the nobility and then the bourgeoisie undergoing profound changes. Versailles embodied the French gastronomic model and ensured its international renown.

This book tells the story of the Versailles gastronomic revolution from the 17th century to the present day. It includes menus selected from the most remarkable documents in Jean-Maurice Sacré's collection, as well as manuscript archives, including the menu served in Louis XIV's carriage during a trip by the Court to Chambord in 1684, the menu of Louis XV's Maison-Bouche for 1749, and state menus. Engravings and photographs illustrate French gastronomy and the art of the table.

Each box, produced by a traditional bookbinding workshop and supplied with a certificate of authenticity, contains 5 offprints reproducing engravings, one for each century analysed in the body of the book. The last offprint features a work by contemporary artist Philippe Cognée.
